In early September, after the grape-sampling phase, a busy harvest began: our enthusiastic expectations were not disappointed, the quality and maturity of the fruit was excellent!
So this year, the entire production of our organic Gavi looks promising: the sugar content and the acidity are reaching a perfect equilibrium.
The alcohol content of all our labels – Marchese col Fondo, Gavi DOCG Massimiliano and Gavi DOCG Carlo – will probably be lower than recent vintages, and this will give greater delicacy to our organic wine.
And of course part of our production had to be … dedicated to our organic kosher Gavi!
